Poor Juliette. She goes into a magically-induced coma, wakes up in the hospital, and suddenly there’s this WEIRD GUY there who insists that he’s her boyfriend. All his stuff is in her house, all her friends insist that she’s been dating him for years, there are pictures of the two of them together…what the hell’s going on?
Everyone hopes Juliette’s memories of Nick will come back. When it looks like they won’t, she decides to try starting over instead. She finds a recipe for Cilantro Lime Chicken that she once wrote down with the note “Nick loves!” next to it, so she makes it for dinner in the hopes that it’ll help them get to know each other again.
Say it with me: “Aww!”
Ingredients
2 boneless skinless chicken breasts
1/4 cup lime juice
2 tbsp olive oil
8 tsp fresh cilantro, chopificated
1 tbsp minced garlic
1/2 tsp salt
black pepper
Directions
Step 1: Combine the lime juice, olive oil, cilantro, and spices. (We used about 5 to 6 cranks of the pepper mill, but you can do more or less.) This is your marinade.
Step 2: Put the chicken boobs in a storage container and pour the marinade over them. Seal them up and put them in the fridge to soak up the deliciousness for a few hours.
Step 3: Get out the grill pan. This was my very first zombie-killin’ pan. Given the direction that Nick and Juliette’s relationship goes in season two, it may be a good idea to keep one of these handy.
Step 4: Preheat the grill pan over medium-high heat.
Step 5: Slap on the chicken boobs and turn the heat down to medium. Omigod, this thing has been cooking for approximately 2.5 seconds and already it smells amazing!
Step 6: Grill for about 10 minutes, then flip. Grill on the other side for another 8 to 10 minutes.
Step 7: Cut one of the boobs open in the middle to make sure it’s done. Now eat!
Result: Okay, aside from being the simplest recipe we’ve done thus far…this is REALLY good! I can see why it’s one of Nick’s favorites. The citrus and cilantro flavors are nice and light, and the chicken is tender and juicy. We’re definitely going to be making this one again. Ooh, maybe with pico de gallo next time, or avocado. Num num num.
